Abstract
The review addresses the ultrasonic assisted extraction (UAE) of protein from spirulina or Spirulina platensis for food application. Spirulina also known as blue-green microalgae is already viewed as a highly nutritional product, which is rich in proteins, vitamins, minerals, and antioxidants. Additionally, spirulina is particularly notable for a high content of protein and thus can serve as an essential source of protein other than any conventional source. Spirulina-derived protein is easily assimilated by the body, making it the ideal protein solution for most individuals, including those who follow a plant-based diet. Spirulina protein extraction is a viable application of UAE, receiving attention over the years as a green method of extraction that have more yield than the traditional techniques. Spirulina's use in the food industry has been expanded with products like energy bar, bakery products and functional foods for health-conscious consumers.
